Delicious as a nutritious snack or sprinkled
on salad, roasted chickpeas are irresistible
and easily adapted to your favorite spice
combinations.

Ingredients:
1 15 ounce can of chickpeas or garbanzo
beans
1 ½ tablespoons extra virgin olive oil
½ teaspoon salt
¾ teaspoon cumin
Instructions:
Preheat the oven to 425.
Drain and rinse the chickpeas and then pat
dry with a paper towel.
Combine the chickpeas, olive oil, salt and
cumin in a bowl. Toss to coat and combine.
Spread the chickpeas on an ungreased
baking sheet or jelly roll pan.
Roast for 15 to 20 minutes until browned and crispy. Toss occasionally for
even roasting.
This is a naturally gluten free recipe.
Variations:
Garlic powder, smoked paprika or any
combination of your favorite spices can
be used in place of cumin.
Try a sweet version by mixing cinnamon
and sugar.
